Blaise Matuidi fired the Euro 2016 hosts into the lead after 20 minutes before Nyom set up Vincent Aboubakar for Cameroon's equaliser.
Arsenal striker Olivier Giroud restored France's lead before the break in Nantes.
Cameroon levelled the match again in the 88th minute through Eric Choupo-Moting.
But a spectacular late free-kick from West Ham United star Dimitri Payet snatched the victory for France.
Nyom could feature again for Cameroon on Thursday in their African Cup of Nations qualifier against Mauritania.
